Curry is full of antioxidants and has lots of other life giving properties. Turmeric, a primary ingredient in curry, is known for many medicinal properties:

It has taken me awhile to get on the Kale Train — but now I am a regular rider. This is due in part to our local Earthfare market offering their organic kale for $0.99 per bunch. This is an important tip if you are committed to eating organic: buy whatever vegetables are on sale. Remember: you CAN afford to eat organic, but you CAN’T afford not to.

There are rumors floating around the Internet that kale should not be eaten raw due to high levels of oxalic acid. After a little research, I found that kale is much lower oxalic acid than spinach — in fact it is considerably lower. 100 grams of kale contains 20 milligrams of oxalates, whereas the same amount of spinach contains 970 milligrams. Mango Cabbage Salad – Recipe: Nutritious. Delicious. Simple.

I love cooking, and I love being creative. But I realize I am not trying to create or share glamorous dishes. My time and budget is limited, and eating only organic food is expensive. But it is necessary. My meals have to be healthy, tasty, simple, and cost effective.

So I had this mango that just would not get ripe and decided to throw it into my cabbage salad.

Because I live on a tight budget, the inspiration for many of my recipes comes from the ingredients I have on hand. Sometimes I would never make a dish again. Other times, I crave a recent creation. This is one of those recipes. I wish I had some in my refrigerator right now. I’d eat them cold — straight out of the container.

Broccoli is loaded with vitamin B, vitamin C, vitamin K, and helps the body absorb vitamin D. To stay healthy, we have to eat organic salads daily. To save time and money, the recipes have to be simple. To eat them with every meal, the food must be tasty. This broccoli salad is another favorite that meets all the requirements.

Xylitol Cut Maple Syrup

maple-709988_1920If you love maple syrup, but are trying to cut down on carbs, I found a simple, but healthy way to get the maple yumminess with less sugar. Unfortunately this recipe does not save on the wallet. However, Costco has the best price on organic maple syrup that I have yet seen. Xylitol Simple Syrup – Fail Proof Recipe

Yes. You can make Xylitol simple syrup  – and it is so easy!

Before you begin, choose your ingredients carefully.

Most Xylitol is derived from corn, therefore it is more than likely genetically modified. The USDA reports that 80-90% of all corn grown in the United States is genetically modified. Popcorn, white corn, and blue corn are exceptions. As a general rule stay away from any corn or corn derived products that are not grown organic.

Safely Sourced Xylitol

The best and safest form of Xylitol is sourced from wood. I prefer Xyla by Emerald Forest, which has its source from American Birch wood.

The water you use is important also. Make sure it is safe and has a ph on the alkaline side. I am currently using an Alkalizing RO System to make my Xylitol Simple Syrup. The system first purifies the water through Reverse Osmosis, then re-alkalyzes and re-mineralizes it. Surprisingly the system is very affordable. Learn more. I’ve also included some water filter recommendations at the bottom of this post.

Recipe for Xylitol Simple Syrup:

Ingredients: Water and Xylitol.

  • The ratio of water to Xylitol is 1:1
  • Heat equal amounts of Xylitol and water, stirring until all the grains have dissolved (do not boil)
  • Cool and store in sealed jar in refrigerator until needed
  • Use as recipe calls – equal measure

Triple Potato Soup: Sweet, Red, and Gold with Curry Recipe
