Crispy Red Potato Hash Brown Pie — Recipe: Delicious. Nutritious. Simple.

I mentioned in a previous post that I am not afraid of potatoes. In fact I love them. But I am cautious not to overindulge. Here is a fun recipe. So simple and tasty.

Recipe yields 6 servings.

I have included a calorie and cost analysis for those watching their waistlines and their wallets. You can afford to eat organic, but you can’t afford not to.

Cost analysis:

  • Potatoes (Trader Joe’s): $1.41
  • Olive oil (Costco): $0.50
  • Spices: $0.25
  • Total cost: $2.16
  • Cost per serving: $0.36

Calorie analysis:

  • Potatoes: 440
  • Oil: 500
  • Spices: negligible
  • Total calories: 940
  • Calories per serving: 157

Ingredients (organic):

Directions:

  • Shred potatoes in food processor
  • Wrap in kitchen dish towel
  • Squeeze out as much liquid as possible
  • Keep wrapped until ready to use
  • Pour oil in large frying pan
  • Heat on medium until very hot – be sure to stay below flash point
  • Unwrap potatoes and place on a plate
  • Evenly distribute potatoes in the pan (they should sizzle or your oil is not hot enough)
  • Cover and cook for 5 minutes
  • Remove lid and cook for an additional 3 to 5 minutes  – making sure they do not burn
  • With a large spatula, flip the potatoes as one unit
  • Sprinkle with garlic granules, sea salt, and pepper to taste
  • Cook for an additional 5 minutes
  • Cut into 6 pie-like wedges
  • Serve hot
