Chia Seed CustardThis recipe is amazing! I love custard, but it takes a lot of effort. This Coconut Milk Chia Seed Custard is so simple — and there is no water bath or cooking necessary. It is also very satisfying and loaded with nutrition.

Ingredients (organic):

Directions:

  • Mix together coconut milk, maple syrup, cinnamon, and vanilla extract.
  • Mix in chia seeds.
  • Let rest several minutes.
  • Measure out about 1/3 cup portions into dessert dishes, stirring mixture between servings.
  • Cover with plastic wrap.
  • Refrigerate at least one hour (or overnight for a smoother set).
