It has taken me awhile to get on the Kale Train — but now I am a regular rider. This is due in part to our local Earthfare market offering their organic kale for $0.99 per bunch. This is an important tip if you are committed to eating organic: buy whatever vegetables are on sale. Remember: you CAN afford to eat organic, but you CAN’T afford not to.

There are rumors floating around the Internet that kale should not be eaten raw due to high levels of oxalic acid. After a little research, I found that kale is much lower oxalic acid than spinach — in fact it is considerably lower. 100 grams of kale contains 20 milligrams of oxalates, whereas the same amount of spinach contains 970 milligrams. Mango Cabbage Salad – Recipe: Nutritious. Delicious. Simple.

I love cooking, and I love being creative. But I realize I am not trying to create or share glamorous dishes. My time and budget is limited, and eating only organic food is expensive. But it is necessary. My meals have to be healthy, tasty, simple, and cost effective.

So I had this mango that just would not get ripe and decided to throw it into my cabbage salad.

In order to maintain our health, we try to eat a raw salad with every meal. Our salads (almost) never include lettuce, but rather hearty, chopped or grated vegetables. I use a food processor as much as possible to save time. My Black and Decker processor has performed very well for me. It has the capacity to chop, grate, and slice. Without it, I’d spend twice the amount of time in the kitchen making salads.

This Ginger Cabbage Salad is one of my goto recipes because it is simple to make, easy on the budget, and tastes great. In addition, every ingredient in this organic salad is nutritious and life-giving (as should be all the foods we eat).
