Triple Potato Soup: Sweet, Red, and Gold with Curry Recipe

Potatoes often get a bad rap due to their high carbohydrate count. While they may be high in carbs, they are still nutritious and high in many vitamins and minerals, including vitamin C and potassium.

Much of these nutrients are found in the skins, which have a higher anti-oxidative property than the flesh. Each unique color that God has created has certain phenol properties that can bring benefits to the body.

The new verdict: we should not abandon potatoes. Rather we should eat many kinds of potatoes – especially those with lots of color.

This unique recipe combines all the goodness of colored potato and skin along side the power house potato (sweet potato), which is loaded with vitamin A and other God created goodness.

Ingredients (organic):

  • 1 large sweet potato washed and peeled
  • 2 medium red potatoes washed with blemishes removed (keep some skin)
  • 2 medium gold potatoes washed with blemishes removed (keep some skin)
  • 1/2 medium onion coarsely chopped
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons curry powder
  • 1/4 teaspoon allspice
  • 1 teaspoon salt
  • 2 cups stock (chicken or garlic)
  • Salt and pepper to taste
  • Healthy water (I use an Eden 5-stage alkalizing RO system)
  • 1/2 cup half and half or milk (optional)
  • Dash of cayenne pepper (optional)
  • Dollop of sour cream (optional)

Directions: 

  • Cube potatoes and place in a 2.5 quart stock pot
  • Cover with healthy water
  • Add salt
  • Boil until tender (about 20 minutes)
  • Drain, reserving broth
  • Sauté onions, curry, and allspice in olive oil until onions are tender
  • Blend together onions, potatoes and (chicken or garlic) broth in two batches
  • Add enough reserved potato broth to blend as needed and to meet desired consistency
  • Place soup in stock pot
  • Salt and pepper to taste
  • Stir in half and half or milk (optional)
  • Heat to desired temperature
  • Serve in bowls with a sprinkle of cayenne and/or a dollop of sour cream (optional)
