Curried Quinoa and Turnips — Recipe: Nutritious. Delicious. Simple. $1.45 per serving.

saffron-454327_1280This recipe is similar to my Curried Quinoa and Sweet Potato recipe. However, this turnip recipe has less steps, making it quicker to prepare. Curry is one of my favorite spice blends — especially in the cold months. It is  loaded with antioxidants and has many other life giving benefits. Turmeric, a primary ingredient in curry,  is known for its many medicinal properties:

  • Anti-inflammatory
  • Increases brain function
  • Antioxidant

I like to cook with white turnips because they have a milder flavor than the purple-topped variety. I am sure, however, purple turnips would work just as well in this recipe.

Directions:

  • Place all ingredients in medium sauce pan
  • Bring to boil
  • Reduce heat
  • Simmer for 20 minutes or until turnips are tender
  • Serve hot
