White Truffled Turnips (this RECIPE could replace mashed potatoes)

 

Metaphor_ Breath-25I stumbled onto this recipe by accident.

While at our local country produce stand, I noticed some white tubers and mistook them for rutabagas. The shop owner kindly corrected me; they were white turnips.

Having never cooked a turnip, I inquired as to the best method of preparation. In his southern accent, he told me to peel ’em and cook ’em like mashed potatoes, just like his wife does.

Easy enough!

The texture was a bit moist compared to mashed potatoes. But they were a satisfying substitute, much lower in carbs and calories (if you are concerned about such things).

The next day, I discovered the beauty of white truffle oil. And I knew it would be a great match. Sure enough! It was amazing.

Here is the recipe for White Truffled Turnips:

Ingredients:

Directions:

  • Place turnips, salt, and water in a 2.5 quart saucepan, covering turnips with water
  • Bring to a boil
  • Simmer until tender (20-25 minutes)
  • Drain water well or turnips will be watery (save for a simple tasty broth – or drink it for the nutrients)
  • Add butter to the hot turnips
  • Mash turnips with potato masher if you want them chunky and then with a electric mixer if you want them smoother.
  • Add 1/2 and 1/2 to thin if necessary
  • Stir in pepper (add more salt if necessary)
  • Prior to serving, drizzle truffle oil (you can mix it in if preferred)
