I love looking at the beautiful pictures many bloggers use when sharing their recipes. One of my favorites was Tales of Chinese Cooking by Charlotte, which unfortunately no longer exists. She was meticulous in her presentation. Her recipes looked delicious too. I loved her authenticity and creativity.
Compare that to my mango – and I am laughing. I love cooking, and I love being creative. But I realize I am not trying to create or share glamorous dishes. My time and budget is limited, and eating only organic food is expensive. But it is necessary. My meals have to be healthy, tasty, simple, and cost effective.
So I had this mango that just would not get ripe and decided to throw it into my cabbage salad. We eat a lot of cabbage because it is loaded with nutrition, keeps well in the fridge, and is affordable. Cabbage and mango blend well. Here is the recipe:
Ingredients (organic):
- 6 cups shredded cabbage
- 1/2 of a medium, sweet red onion
- 1 peeled and seeded mango (learn how)
- 3 Tbs extra virgin olive oil
- 3 Tbs Bragg’s Apple Cider Vinegar
- 1 tsp honey (may be omitted if your mango is ripe)
- Salt and pepper to taste
Directions:
- Finely chop onion in food processor
- Finely chop mango in food processor
- Place onion and mango in a large salad bowl
- Add oil, vinegar, and honey
- Stir together until well combined
- Add cabbage and stir until well coated
- Salt and pepper to taste
