When I made this salad today, I had no idea that beets were considered an aphrodisiac. I also didn’t know that if beets turn
your urine pink – it is a sign that you have low stomach acid.
But this I knew: the salad was a power house of nutrition.
- Beets are loaded with “potassium, magnesium, fiber, phosphorus, iron; vitamins A, B & C; beta-carotene, beta-cyanine; [and] folic acid,” says organic farmer Kiley Dumas, “and nature’s Viagra.”

Ingredients (Organic):
- One Large Raw Beet: peeled and shredded
- 10 Small Carrots: peeled and shredded
- Tablespoon of Minced Ginger
- 2 Tablespoons Raw Apple Cider Vinegar
- 2 Tablespoons Extra Virgin Olive Oil (first cold pressed)
- 1 Teaspoon Raw Honey (optional)
- Touch of Sea Salt (unrefined)
Directions:
- Combine first 3 ingredients until mixed
- Sprinkle salt on top
- Drizzle the honey on top
- Drizzle olive oil and vinegar
- Stir until fully moistened
This recipe is even better the next day!
