I love spicy food. For years I have be-groaned making salsa because it takes so long to chop up all the fresh veges. And besides, my fingers got hot from the peppers.
Then my cousin introduced me to a simple blender recipe. I have changed it just a bit to suit our family. I love to have fun with recipes. So don’t think you have to stick with it 100%. Experimenting is what makes cooking fun and personal. Yes, sometimes there will be flops, but it is worth it.
Ingredients (organic):
- 1 large can organic canned tomatoes (BPA free)
- 1 large organic or home-grown tomato cut into about 8 pieces
- 1 small organic red onion quartered (I personally don’t like really strong onions – so adjust according to the strength of the onion and your preference)
- 1 large clove of organic garlic cut into about 8 pieces (optional)
- about 1/4 cup organic cilantro leaves (some stems are fine)
- 1-2 medium organic or homegrown jalapeño peppers quartered with the stems cut off. Sample for heat by cutting off the end piece nearest the stem and touching it to your tongue. Decide from the results how many jalapeños to use.
- plenty of sea salt and pepper to taste (lots of salt really makes this salsa tasty)
Directions:
- Put all the ingredients in the blender in the order listed.
- Pulse blender a few times to turn the ingredients.
- Then blend for just a few seconds. If you over blend, it will get too runny, but it will still taste great.
- Refrigerate until ready to serve.
- Great on tacos, or for dipping with organic corn chips.
