Simple Sprouted Spaghetti and Greek Salad

Tonight, we are having spaghetti – one of my favorites. In a recent post, I mentioned that spaghetti can be very nutritious if it is made with the proper ingredients. So here is what can go into healthy spaghetti (the combination of ingredients can be changed to suit your taste preference).

The Sauce

The first step is to saute some organic onions in some organic extra virgin olive oil and then caramelize them slightly, adding some chopped garlic towards the end. (Let me just say, if I forget to mention it, consider that whatever ingredients I use are organic.) Then I season the onion garlic mix with some basil, oregano, sea salt, pepper, and red-pepper flakes (just a tad). Use whatever spices work for you in whatever measure you like (I don’t measure, I just shake and usually use thyme and rosemary – but left it out today).

Next the meat. I usually brown organic grass-fed beef in the same pan as the onions, but today I had some organic grass-fed beef sausage links that I used instead. Put them in the pan, brown them a bit, then add the secret ingredient: Trader Joe’s Organic Marinara. I love the sauce (when it is spiced up a bit); all the ingredients are pure, and it comes in a glass jar. Add a little raw honey (today I used raw avocado honey that is wonderful – not organic) and a little organic balsamic vinegar, and let it simmer until the meat is cooked and the ingredients have mingled well. Then add (at least that is what I did) some chopped zucchini and sliced bell pepper. Let simmer until veges are soft – but not over cooked.

The Noodles

Today,  I used organic Ezekiel 4:9 spaghetti noodles. Sprouting grains causes them to come alive and supplies the body with greater nutrients than un-sprouted grains. It also neutralizes phytic acid (a sprout inhibitor). Phytic acid is hard for the body to digest and robs vital nutrients from your body to help. Sprouting grains has been practiced for millennia –  only in the last 100 years losing its normalcy. Ezekiel 4:9  noodles also cook quicker than regular noodles – and they taste delicious. I added a little sea salt and olive oil to the water before cooking. The salt is for taste; the olive oil is to keep the noodles from sticking.

Simple Greek Salad

This is one of my favorite salad recipes. Cut up tomatoes, cucumber, and red onions (sliced thin). Mix them together. Season with sea salt, pepper, and oregano. Add a tad of honey and equal parts organic extra virgin olive oil and balsamic vinegar. Mix. To really make this salad delicious add some feta cheese and kalamata olives.

The Show

Add a little sauce to the noodles to keep them from sticking after you have drained them. Then place a serving size amount on the plate and top with the sauce. Some raw organic parmesan cheese will really put the final touch on this meal (we just used the rest on our organic pop corn – boo hoo). Put the salad on the side.

The Drink

Serve with a glass of Frey Organic Natural Red (sulfite-free) wine.
