Simple Frozen Yogurt Recipe that Actually Boosts Eye Clarity

Hereditary Weakness.

Macular Degeneration runs in our family. My grandmother lost her eyesight due to it, and my father is legally blind due to the devastating “wet” version of the disease. Learn more about hereditary weakness here. Not only do I have the “knowledge” that I have a hereditary weakness in my eyes — but I can “feel” the weakness. My eyes are sensitive to bright lights, and they easily get tired staring at the computer screen. I do have prescription glasses, but I only wear them when my eyes are feeling tired. This keeps my eyes from becoming too lazy with the prescription — and thus declining quicker. Using this principle (along with a whole-food diet) has slowed down the progression of my vision loss. I was able to keep the same pair of glasses for well over ten years before needing a new prescription.

Blueberries.

Blueberries are excellent for the eyes, so I have made a recent commitment to incorporate them into my diet as much as possible. Unfortunately, organic blueberries are expensive. But my eyesight is more important than my budget. This blueberry frozen yogurt recipe is a great way to use food to stay healthy. It also works perfectly with my weight loss goals.

I have been working hard to eat the foods that I love and still lose weight. It really has not been hard work because I love to cook foods that I love to eat — and I am committed to achieving a healthy weight.

You could substitute any frozen fruit in this recipe — or use a combination of frozen fruits.

Calorie and Cost Analysis: yields 2 servings

Ingredients (organic) Cost Calories
1 Cup Frozen Blueberries (Cascadian Farms) $3.00 60
Yogurt (Trader Joe’s) $0.50 85
————- ——– ———
Total $3.50 145
Per Serving $1.75 73

Ingredients:

  • 1 Cup Frozen Blueberries — I used Costco organic wild blueberries the first time I made this recipe. The price was good, but they were not sweet enough. The next time I used Cascadian Farms Premium Organic Blueberries. They were much sweeter. Since there is no sweetener added to this recipe — use as sweet a fruit as you can find. However, you could add a little honey or maple syrup if you wanted to.Blueberries
  • 1/2 Cup Plain Organic Yogurt — Make sure you use a live culture, organic yogurt. I love Trader Joe’s European Whole Milk Yogurt. You could substitute whatever you like: greek, whole, or skim.thumb_IMG_5131_1024

Directions:

  • Throw all the ingredients into your food processor and pulse and chop (blend) until it is smooth and delicious.
  • Serve immediately or refreeze in a separate container.
  • Makes two servings.
  • Double or triple recipe for more servings.
  • Add your favorite topping.
