This was my first attempt baking with quinoa: success! Though there is a mild “quinoa” flavor, after a day in the fridge – they are very satisfying, even delicious.
Warning: almost 350 calories each; and using sugar is never 100% healthy. Make adjustments as fit your preferences. This recipe yields about 12 cupcakes.
Prep:
- Gather ingredients for cupcakes and frosting (see below)
- Line cupcake tin (see notes at bottom for parchment directions)
- Preheat oven to 350 degrees
Cupcake Ingredients:
- 1 Cup Evaporated Cane Juice (organic sugar)
- 3/4 Cup Quinoa Whole Grain Flour (organic)
- 1/8 Cup Potato Starch (organic)
- 3/4 tsp Baking Soda (aluminum free)
- 3/4 tsp Baking Powder (aluminum free)
- 1/2 tsp Sea Salt (unrefined, no additives)
- 1/2 Cup Cocoa Powder (organic, alkalized)
- 1/8 Cup Coconut Oil (organic, melted)
- 1/8 Cup Olive Oil (extra virgin, organic)
- 1/2 Cup Milk
- 1 tsp Vanilla Extract (organic)
- 1/2 Cup Fresh Brewed Coffee (decaf, organic, hot)
- 1 Egg (organic, pasture raised if possible)
Frosting Ingredients:
- 1 Stick of Butter (organic, salted, melted)
- 2/3 Cup Cocoa (organic, alkalized)
- 3 Cups Powdered Sugar (organic evaporated cane juice)
- 1/4 Cup Milk (organic)
- 1 tsp vanilla extract (organic)

Directions for Cupcakes:
- Combine sugar, flour, potato starch, baking soda, baking powder, salt.
- Add egg, milk, oils, vanilla.
- Beat on medium speed for 2 minutes.
- Stir in hot coffee.
- Pour batter, which will be thin, into the muffin tin, filling cups about 3/4 full. There may be a small amount of batter left over, which can be baked in a ramekin.
- Place in pre heated oven.
- Cook about 23 minutes or until toothpick comes out clean.
- Remove from oven let sit for 5 minutes.
- Remove cakes from tin, and cool completely.
- Frost (see directions below for frosting).
Frosting Directions:
- Place melted butter into a mixing bowl.
- Sift cocoa into bowl and mix
- Alternately add powdered sugar and milk and beat until frosting is spreading consistency
- Add vanilla, mix.
- Pipe frosting onto cooled cakes (you may use a zipper bag, cutting off one corner, and squeezing)
Lining with Parchment:
- Cut 12 pieces of parchment paper in 5″ squares
- Place a dab of coconut oil in each cupcake hole
- Using the bottom of a cup or jar, secure parchment into tray
