This is one recipe I just can’t get enough of.
Last night I ate it hot as a side dish; today I am eating it cold like a salad. It is just YUM! Of course I love olive oil, garlic, and Italian seasoning – which make this recipe the best.
Ingredients (organic please):
- One large spaghetti squash (only use 1/2 in recipe)
- 1/4 cup extra virgin olive oil
- 1/2 tsp garlic granules (or 2-3 cloves minced)
- 1/2 tsp sea salt
- 2 tsp Italian seasoning
- 1 medium tomato (diced)
- Dash of red pepper flakes (optional)
Prepare Spaghetti Squash
- Rinse and dry whole spaghetti squash
- Poke several holes in rind
- Bake whole in preheated oven at 350 degrees for an hour (or until tender)
- When cool enough to handle, cut in half lengthwise
- Scoop out and discard pulp and seeds of 1/2 squash
- Shred out flesh with a fork
Prepare Sauce
- Mix together in a bowl: olive oil, garlic, sea salt, Italian seasoning, tomato, and red pepper flakes
- Add one half of the prepared spaghetti squash while still hot (save other half for another day – or adjust recipe)
- Mix together until squash is well coated with sauce
Serve
- Serve hot or refrigerate for another day
