Unique food needs.

My husband and I don’t share all the same food interests. In fact, our bodies respond differently to different foods. He thrives on a lot of red meat and cracked spelt. I can only eat a little of either — as my body has difficulty digesting them. On the other hand — I love beans, but he can’t digest them well. This is such a good reminder that God has designed each of us in a unique manner.

Beans for breakfast.

I am thankful to eat this bean soup all to myself. And I get to make it as spicy as I like. On the mornings my husband eats cracked cereal, I have a bowl (or two) of beans. Yes, I like beans for breakfast.

This recipe is so easy, nutritious, and filling. You can tone the spice level down (or up) according to your personal preference.

Organic is affordable.

I use organic canned beans (with BPA-free lining). This recipe works best with S&W organic black beans, which can be purchased at Costco for a great price. I recently paid $6.79 for eight 15 oz cans. You could also cook your own beans using about 2 cups cooked beans for the recipe. This would save money too — but not time.

With the growing availability of affordable organic food — there is no excuse to not make the full switch to 100% organic. Throw out all those processed, additive laden, pesticide filled products and fill up your pantry with wholesome, life-giving food. You’ll be glad you did.

1/8 tsp. Garlic Granules (Thrive Market) $0.02 0
Crushed Red Pepper to taste (Thrive Market) $0.02 1
 Black Pepper to taste (Thrive Market) $0.01 0
 1 tbsp. fresh Jalapeño Pepper (Farm Market) $0.25 2
2 tbsp. whole milk Greek Yogurt (Ingles) $0.15 27

Ingredients (organic):

Directions:

  • Drain beans, reserving liquid
  • Place 1/2 cup beans in small sauce pan
  • Place remaining beans and liquid in blender
  • Pulse until blended then add to sauce pan
  • Mix into bean mixture:  salsa, 1/4 cup diced tomato, 1.5 tbsp. onion, and spices (but not jalapeño)
  • Bring to boil, stirring frequently
  • Reduce heat and simmer for 3 minutes, stirring frequently
  • Serve hot
  • Garnish with remaining onion and tomato, jalapeño, and yogurt.
