Organic Chocolate Beet Cake Recipe. Delicious and (almost) Nutritious.

Chocolate Beet CakeHere is a great recipe if you want to sneak some beets into your diet. Making Organic Chocolate Beet Cake is not as simple as some of the recipes on Reformed Health — but it is so worth it.  “Healthy” chocolate cake that tastes like the kind you grew up on is not necessarily attainable — but there are ways to make it healthier, and this recipe nails it.

My daughter Emily introduced me to chocolate beet cake — and her recipe is modified from the queen of cooking: Martha Stewart. Make it all organic — and you have my version, which I am posting. This organic chocolate beet cake can be frosted or not. For me: frosting makes this cake shine. For my daughter: no frosting please. We are all unique. Here are recipes for two chocolate frostings: a buttercream and a whipped. You could even try filling the cake with the whipped and frosting with the buttercream. If you are counting calories: use sparingly. I have only tried this cake with the buttercream — and I can vouch it is an amazing combo.

Chocolate Beet Cake Ingredients (organic):

Directions:

  • Preheat oven to 350°
  • Oil 9 x 13 glass baking dish (line with parchment paper if you desire to layer or frost)
  • Peel and chop beets
  • Boil beets in clean water until tender
  • Drain beets, reserve water
  • Add beets to blender, add just enough beet water to puree, then puree
  • Mix dry ingredients (sugar, cocoa powder, flour, baking soda, salt) in medium bowl, set aside
  • In a small sauce pan, melt chocolate morsels and butter, then remove from heat
  • Mix pureed beets and chocolate mixture in large mixing bowl (or stand mixer)
  • Beat in eggs
  • Add reserved (cooled) beet water and vanilla, mix until well blended
  • Add dry ingredients, mix until well blended
  • Spread mixture evenly in baking dish
  • Bake until toothpick comes out mostly dry, but a tad sticky — about 30-40 minutes
  • Let cool in pan
  • Frost in pan if desired (or remove from pan to layer and frost)
