An Organic Olive Oil Mayonnaise Recipe that Works $0.12 per serving. Simple. Nutritious. Delicious.

mayoI have been frustrated by failed attempts at homemade mayonnaise — and this is the first recipe that has given me success. The gal who shared this recipe with me suggested using a light olive oil — but I am committed to organic, extra virgin, first cold pressed. Costco carries a great product for a great price. Their Kirkland brand has loads of flavor. It is great for salads, cooking, or dipping bread. It also works with this mayonnaise recipe. The flavor is a bit intense — but it works for our family (in a pinch).

1 tsp. Maple Syrup (Costco) $0.08 18
1/2 tsp. Yellow Mustard (Trader Joe’s) $0.02 2

Ingredients (organic):

  • 1 Large Egg
  • 2 tablespoons Bragg’s Apple Cider Vinegar
  • 1 cup extra virgin, first cold pressed Olive Oil (divided 1/4 c. and 3/4 c.)
  • 1/2 teaspoon pink  Sea Salt
  • 1 teaspoon maple syrup
  • 1/2 teaspoon yellow mustard

Directions:

  • Put all ingredients in blender (except 3/4 cup oil)
  • Blend
  • with blender on, slowly add remaining 3/4 cup oil
  • Store in refrigerator
  • Use like regular mayonnaise
